…That’s what they call me!

When I first started this cake decorating thing I had no idea I’d be learning about the “science” behind the baking. All I wanted to do was make my nephew a cool looking cake for his birthday. Of course, decorating cakes would be the natural extension of my painting and creative side… and I do love to cook (rather well, actually)…but BAKING? I didn’t quite know what I was in for. The frustration of getting that perfectly dense (yes, these cakes must be dense), moist, tasty cake involved way more than a box of cake mix, a pan and an oven. There really is a baking science that requires testing recipes, tasting recipes, reading, researching, sketching diagrams, chemistry, measuring, math (MATH?? Ugh!). Not to mention bugging my mentor-friend Angela for cake advice, daily trips to the grocery store, the constant need of more cake supplies, using friends and loved ones as guinea pigs (I really do love you guys!), cake bombs (good and bad), burns, crumbs, sweeping, cleaning, dishes, dishes, dishes, inhaling powdered sugar, swollen feet, sore back, burning arm muscles, and the LOSS of any inch of counter space in my kitchen to actually cook! …but somehow I got this down, and I love it! Cake Engineer? Darn right!
